In 1983 Giuseppe and some friends opened a restaurant in the historic center based on the idea of a single dish, tasty salads, for all people who have a quick lunch. It was a small revolution in catering, at a time when everyone was enthusiastic about the large international chains of meals that were all the same. Insalata Ricca, on the other hand, stood out from the outset for its minimally processed, always fresh, high quality food and for its personal attention to the customer, always considered a guest. After almost 30 years, this idea has become a popular restaurant chain, which has always maintained family management and an artisanal approach.
